Description

Also known as toovar dal, arhar dal, split yellow peas, split pigeon pea or simply pigeon pea, toor dal is considered to be a popular legume in India cuisine.

Being yellow in colour, it has a mild nutty flavour and is cholesterol and sugar-free, and hence, it is a healthy food choice for both heart patients and diabetics alike.

 

Usage

The toor dal is used in a variety of dishes all over India. In South India, while it is used to make ‘sambar' along with other dishes, it is also utilised by the Parsees to make the traditional ‘dhansak'. However, to eat the toor dal, it has to be soaked for an hour before cooking in a pressure cooker along with the other ingredients, according to the recipe.
